A hydrolate (or hydrosol) is the aqueous distillate that remains after steam distillation and separation of the essential oil. Also known as floral water, however, this term is not regulated and a floral water can be a mixture using synthetic perfumes. Hydrolates are therefore low-concentration extracts of aromatic and medicinal plants, composed mainly of distilled water and water-soluble plant compounds, making them a gentle alternative to essential oils, especially for use with sensitive people or animals. Hydrolates are also the only way to have "certified organic water", which is very useful for water-based cosmetic formulations, and for certain beverages. Hydrolates are highly sensitive to microbial contamination and development, as well as to heat, and keep much less well than essential oils (most of which have natural properties that help fight viruses, bacteria and fungi). For this reason, they should be kept in cold storage and/or a preservative added, particularly for cosmetic and non-food uses (generally COSMOS organic certification, whereas un-preserved hydrolates are EU organic for food use).
