Sweet clover (Melilotus officinalis) is an annual or biennial herb, easily recognized by its clusters of bright yellow flowers. As a melliferous plant, it naturally attracts bees and thrives in well-drained soils under temperate climates. In France, it is harvested from July to September, when it releases the characteristic scent of fresh hay a sign of coumarin fully developed within the plant material. This aromatic richness explains sweet clover’s historic role in perfumery, where it lends its signature hay-praline facets to fragrance compositions.
