Harvest
Lavender, distilled for over 150 years, is an iconic symbol of the Provence landscape. It has played a central role in the history of perfumery, particularly in the formulation of "eau de Cologne." Originally foraged from the wild in the high plateaus of Provence, lavender is now cultivated in various varieties to adapt to different climates and altitudes. France, Bulgaria, Eastern Europe, and China are among the leading current producers. Harvesting occurs at full bloom, typically from June to July, and the flowering tops are steam distilled to produce organic hydrolate.
Known as "blue gold" of Provence, lavender has been used since antiquity for its medicinal and fragrant properties. The Romans used it in their baths to purify water and scent their clothes.
In the 19th century, lavender saw a surge in Provence due to the growing demand from the perfume industry. Today, it remains one of the most popular plants, particularly in the fields of aromatherapy and cosmetics.
