Harvest

Dipteryx odorata, growing wild in the basins of the Amazon and Orinoco, is a tree native to South America whose almond, found in the fruits, is called Tonka bean. The fruits, ripening in winter, begin to fall and are harvested from February to April in the forest. The fruits need to be cracked with a stone tool to collect the beans, whose skin is brown, and the flesh is ivory. Tonka bean has been used in recent years as a flavoring in food and can be grated directly onto desserts or macerated in sauces or sweet creams.

Manufacturing

Native to Venezuela, the organic beans are left to dry for a few weeks before being extracted by Biolandes in France.

Perfumery

In fine perfumery compositions, Tonka Bean absolute is typically used in amber and fern accords. It also blends well with notes of leather, vanilla, and tobacco. It can also impart a natural 'gourmand' effect to white floral accords such as tuberose or frangipani.

Food flavor

For natural flavor use, dilute well in the food preparation.
