Harvest
The olive tree (Olea europaea), a member of the Oleaceae family, has been cultivated for over 5,000 years, primarily in Mediterranean regions where it thrives under ideal climatic conditions. The olive tree can grow to a height of 15 to 20 meters and, in favorable environments, can live for several centuries, making it a true symbol of longevity and resilience.
The fruit of the olive tree, the olive, is harvested to extract a precious oil rich in monounsaturated fatty acids and antioxidants. Olive oil has been valued since antiquity not only for its nutritional properties but also for its numerous applications in cosmetics and skincare.

The oil is obtained through cold mechanical pressing of ripe olives, without the use of solvents or excessive heat. This gentle process preserves the integrity of the naturally occurring compounds in olives, such as essential fatty acids, polyphenols, and vitamin E.
The main steps of the process are as follows:

Sorting and washing of fresh olives to remove impurities.

Grinding of the whole fruit (pulp and pit) to form a homogeneous paste.

Malaxation at a controlled temperature, generally below 27 °C, to promote oil release.

Centrifugal extraction to separate the oil from the aqueous phase and solid residues.

Natural decantation or light filtration to clarify the oil without altering its composition.
